This recipe is a quick and easy, yet tasty marinated chicken deep fried and then tossed with yummy sauce.

Recipe:

Ingredients:

  • Fresh Boneless Chicken Breast – One and half kg.
  • Salt to taste.
  • White Pepper powder – One and half tsp.
  • Dark Soya sauce – 4 tsp.
  • Red Chili sauce – 4 tsp.
  • Vinegar – 4 tsp.
  • Egg White – 2 eggs.
  • Ginger Garlic paste – 2 tbs.
  • Baking Soda – Half tsp.
  • Corn flour – 4 tbs.
  • Refined Flour – 5 tbs.
  • Oil – sufficient for deep frying.
  • Oil for preparing sauce – 2 tbs.
  • Chopped Ginger – 2 tbs.
  • Chopped Garlic – 5 tbs.
  • White portion of Spring Onion – 6 tbs.
  • Top Green portion (leaves) – 3 to 4 spring onion greens – finely chopped.
  • Tomato Ketchup – 2 tbs.

Method:

To prepare Sauce:

  • Take a large deep kadai.
  • Add 2 tbs of oil and heat it up.
  • Add chopped ginger and chopped garlic in to the hot oil and sauté for few seconds on medium flame.
  • Add chopped white portion of spring onion and mix it well.  Sauté it for few seconds.
  • Add chopped green portion of spring onion leaves and mix it well.  Sauté it for few seconds on medium flame.
  • Reduce the flame to low.  Add 2 tbs of red chili sauce, little salt, 2 tbs of tomato ketchup, 2 tsp of vinegar, 2 tsp of soya sauce, half tsp of white pepper powder and mix them well.  Cook these ingredients for few seconds on low to medium flame.
  • Add little bit of water and mix well to prevent it from burning
  • Take one and half tsp of corn flour in a small mixing bowl, add little water and mix it well.  Add this to the kadai and mix them well.  Cook this for few seconds until the sauce becomes thick. Turn off the heat.  Keep it aside.

To prepare Chicken:

  • Take the boneless chicken breast and prick them on both sides using fork.  Place them in a large mixing bowl.
  • Add one tsp of white pepper powder, salt to taste, 2 tsp of dark soya sauce, 2 tsp of red chili sauce, 2 tsp of vinegar, two egg white, ginger garlic paste, baking soda, 2 tbs of corn flour, maida flour in to the mixing bowl with chicken.  Mix them well using your finger/palm.  Coat the marinade properly on the chicken.  Allow it to marinate at least for 30 minutes.
  • Take a deep frying kadai and add sufficient oil for deep frying the chicken. Heat it up on medium flame.
  • Carefully place the marinated chicken in to the hot oil and fry them on medium flame until it is light golden brown and half done.  Remove it on a strainer to drain any excess oil.  Do this for all the remaining chicken.
  • Keep the half fried chicken for 15 to 20 minutes or until it has cooled down.
  • Again heat the same cooking oil on medium to high flame.
  • Carefully place the half fried chicken in the hot oil and fry it on both sides on high flame until it becomes crisp and brown.  Remove it on a strainer to drain excess oil.  Do this for all the remaining half fried chicken.

To prepare Oriental Chicken:

  • While frying the chicken, heat up the cooked sauce on another flame on medium heat.
  • Once all the chicken are fried to perfection, transfer all the friend chicken to this sauce kadai.  Mix them well until the sauce coats all the chicken, on medium flame.  Turn off the heat.
  • Cut the Oriental Chicken and serve hot.  Garnish it with green chopped spring onion.
  • Oriental Chicken can be served with rice or noodles.
