Surmai Fish Pakoda is a juicy Fish cubes, coated in a spicy batter and fried till light golden brown. This recipe is great snack and a party starter.

Ingredients:
- Fresh Surmai (Kingfish) Fish – Boneless 350 gms. Cut in to One-inch cubes.
- Chawal Ka Atta (Rice Flour) – 5 tbs.
- Makai ka Atta (Corn Starch) – 4 tbs.
- Fresh Hari Mirchi (Green Chili) – 1 long piece.
- Adrak (Ginger) – 3/4th inch piece.
- Lassun (Garlic) – 8 coves.
- Ajwain (Carem Seeds) – 3/4th tsp.
- Lal Mirchi (Red Chili) powder – 1 tsp.
- Nimbu ka Ras (Fresh Lime juice) – 1 tsp.
- Haldi (Turmeric) powder – 1/4th tsp.
- Crushed Kaali Miri (Black Pepper) powder – Half tsp.
- Salt to taste.
- Sufficient cooking oil for deep-frying.
Method:
- Take a mortar and pestle. Add green chili, garlic, ginger and little salt to it. Crush them into fine paste.
- Add carem seeds (ajwain) in to the same mortar and pestle. Crush it coarsely along with chili, garlic and ginger. Remove it in a bowl.
- Take a large mixing bowl. Add Surmai fish cubes.
- Add crushed chili, garlic, ginger and carem seeds paste to the Surmai fish. Add turmeric powder, half the quantity of red chili powder, half the quantity of crushed black pepper and fresh lime juice. Mix it well until all the fish are coated with this marinade. Allow it to marinate for at least 15 minutes.
- To prepare a batter, take another mixing bowl. Add rice flour, cornstarch, remaining red chili powder, remaining black pepper powder and salt to taste. Mix them well. Add water little by little and keep mixing the batter until it becomes thick. Batter should not be watery.
- Take a deep frying kadai and add sufficient oil for deep frying. Heat up the oil on medium flame.
- Take the marinated fish and dip it in the batter one by one. Then carefully place it in the hot oil. Deep Fry the Surmai fish on medium flame for 3 to 4 minutes on both sides. Remove the Surmai Fish Pakoda when it becomes golden brown.
- Fry all the marinated fish in batches as mentioned in the above step.
- Surmai Fish Pakoda is ready to be served. Crispy & Crunchy from outside and Soft & Juice from inside.
- Serve hot Surmai Fish Pakoda along with sweet chili sauce or any other sauce of your choice.
