The Mutton Kebab is marinated with various spices and herbs. Traditionally the Kebabs or chunks of meat are inserted into skewers and grilled or barbequed in charcoal fire. I am making the Kebabs in a unique way, as I would be cooking the Mutton Kebabs in Microwave Oven. The Mutton Kebab can be eaten as a starter or appetizer.

Ingredients:
- Boneless Mutton (Goat Meat) – Half kg.
- Raw Papaya – One and half inch cubes with skin.
- Garlic (Lassun) – 8 to 10 cloves.
- Ginger (Adrak) – One inch.
- Fresh Turmeric (Haldi) – One inch.
- Lime Juice – One and half tsp.
- Hung Curd (Dahi) – 3 tbs.
- Caraway Seeds (Shahi Jeera) – One tsp.
- Black Pepper (Kaali Miri) – One tsp.
- Salt to taste.
- Dried Fenugreek leaves (Kasuri Methi) – One and half tsp.
- Dried/Fried Onions – 2 tbs.
- Long Pepper (Peepli)- 3 pieces.
- Cinnamon Stick (Dal Chini) – One inch.
- Asafoetida (Hing) powder – Half tsp.
- Coriander (Dhaniya) seeds – 2 tsp.
- Cloves (Lawang) – One tsp.
- Stone flower (Dagad Phool) – 2 petals.
- Bay Leaves (Tej Patta) – 2 small size.
- Nutmeg (Jaiphal) – Half tsp.
- Carem (Ajwain) seeds – Half tsp.
- Kashmiri Red Chili powder – One and half tsp.
- Mace (Javitri) – One petal.
- Star Anise (Chakri phool) – One.
- Mustard Oil – One tsp.
- Tailed Pepper (Kabab Chini) – Half tsp.
- Green Cardamom (Choti Elaichi) – Four.
- Black Cardamom (Badi Elaichi) – One.
Method:
- Take a frying pan and heat it up. Once hot, reduce the flame at low to medium. Roast all the whole spices. Donot burn the spices.
- Add coriander seeds and black pepper and roast them for a minute or so. Then add long pepper, tailed pepper, green and black cardamom, cloves, cinnamon stick, star anise, mace, nutmeg and bay leaves. Dry roast all these ingredients for around one minute. Then add caraway seeds, carem seeds and stone flower and again roast them for another 15 to 20 seconds. Then turn off the flame. And add dried fenugreek leaves and mix them well. Transfer all these spices in to a plate and allow it to cool down.
- In the same frying pan, add ginger, garlic and turmeric and heat it up. Roast them on medium to high flame until you see charred marks on them. Keep stirring them. Remove them in a plate and allow it to cool down.
- To prepare a marinade, take a grinder. Add all the dry roasted spices in to the grinder jar. Grind them into fine powder.
- Add roasted ginger, garlic, turmeric and raw papaya in the same jar. Grind them without adding water. Add fried onions, lime juice, asafetida powder, kashmiri red chili powder, mustard oil and salt to taste in the same jar. Grind them into a fine paste and add very little water if required. This marinade should be thick and not watery. Remove this marinade paste in a bowl.
- Take a large mixing bowl and add the mutton. Add marinade paste and hung curd into it. If you don’t want the Mutton Kebab to be hot and spicy, add only half the quantity of marinade and use the other half next time. Mix/Rub the marinade on Mutton pieces properly so that the marinate coats on the Mutton nicely.
- Make a well in middle of the marinated mutton. And place small steel bowl in the well.
- Take around 2-inch size of charcoal and heat it up on direct fire until it becomes hot.
- Once the charcoal is red hot, carefully lift and place this hot charcoal in the small steel bowl. Add 3 to 4 cloves on the hot charcoal. Then add one tsp of ghee/clarified butter on the hot ghee. Smoke starts to come out. Immediately cover the large bowl with a tight lid to prevent any smoke from escaping. Leave it for 20 minutes.
- Carefully remove the small steel bowl from the middle.
- Mix the mutton well.
- Keep this smoked marinated mutton in room temperature for at least two hours and later keep it in fridge for at least another four hours.
- Take skewers and pierce the marinated mutton in the skewers. Do this for all the marinated mutton.
- Carefully place the Mutton Skewers inside the Microwave Oven. Select “Kebab” on the Microwave Oven. Add total kilograms of mutton to be cooked. And Press Start button. It takes around 20 minutes for Mutton to cook perfectly.
- If you have charcoal BBQ, then you can us it instead of Microwave Oven.
- After about 10 to 12 minutes of cooking the Mutton Kebab in Microwave Oven, open the Microwave door and carefully apply some ghee or butter on the Mutton surface. Close the Microwave door and continue cooking the Mutton Kebab until it is done perfectly.
- Delicious, Succulent and Juicy Mutton Kebab is ready to be served.
- Serve Mutton Kebab with green mint chutney and lime.
