The ‘brown’ in this Parsi brown rice comes from caramelized sugar. Normally any white rice or basmati rice is used to cook this rice dish.  I have used healthy brown basmati rice to cook this dish. Despite the caramel, this rice is not overly sweet, but has just a tinge of sweetness that is the perfectly with spicy Dhansak. You can choose to make Vegetarian Dhansak or Mutton Dhansak as per your preference, and this brown rice will go with both of them quite nicely.  Please take a look at my video for detailed recipe of Parsi Brown Rice.
