Walnut Chocolate Cake is what I baked for the first time. Healthier ingredients used are Walnut, Extra Virgin Olive Oil, Dark Chocolate (99% Indonesian Chocolate), eggs and raisins, apart from other ingredients used for this delicious cake. Try baking this cake at home using this recipe.

Ingredients:
- Dark Chocolate (99% Indonesian Chocolate) is what I used. You can use any Dark Chocolate for this recipe – 100 gms.
- Raisins – Half a cup.
- Eggs – Two.
- Walnut – 200 gms. Roughly chopped into small pieces.
- Vanilla Essence – Half tsp.
- Baking Powder – Half tsp.
- Baking Soda – Half tsp.
- Maida (Refined Flour) – Two cups.
- Sugar – One cup. You can take powdered sugar also which will be easy to dissolve and mix with the cake dough.
- Butter – 3/4th cup.
- Extra Virgin Olive Oil – 2 tbs.
- Milk – Half a cup.
- Salt – just a pinch only.
Method:
- Take a large bowl. Place a fine sieve (strainer) on the bowl.
- Add maida flour, baking powder, baking soda and pinch of salt on the seive.
- Gently shake the seive so that all the ingredients mixes well and fine flour is collected in the bowl through the sieve.
- Take another large mixing bowl. Add all the sugar to it.
- Melt all the butter in a microwave for 10 or 12 seconds and pour the melted butter in the sugar bowl.
- Mix the sugar and melted butter until the sugar dissolves at least to 70 percent. Keep stiring this mix continuously until the sugar dissoves.
- Add extra virgin olive oil. Continue stiring and mixing the sugar, butter, oil mix.
- Break one egg and add it to the sugar/butter/oil bowl. Continue to whisk / stir this mixture for another 5 minutes.
- Now break the second egg and add it to the sugar mix bowl. Again continue to whisk / stir for another 5 minutes.
- Add vanilla essence to this sugar / egg mixture. Stir it well for couple of minutes.
- Take a kadai and fill it half with water. Place this kadai on the flame and let it heat up.
- Place another small bowl. Break all the chocolates and add it in this small bowl. Place this small bowl carefully in the middle of the kadai having hot water. This is to melt the chocolate completely. Keep stiring the chocolate continuously to avoid burning of the chocolate. Don’t allow water from the kadai to go in the chocolate bowl.
- Start Pre-Heating the Oven at 180 deg C.
- Take the silicon cake mold and apply butter on the inner surface of the mold. Dust the inner surface of the mold with maida flour on top of the butter. Keep it aside.
- Add melted liquid chocolate to the sugar / egg mixture bowl. Mix them well. Continue to stir them until the chocolate is completely mixed well with other ingredients in this bowl.
- Add fine maida flour (seived) slowly to the chocolate sugar egg mixture bowl. Continue to stir them as you add maida flour. Stir this mixture for another 5 minutes.
- Add raisins and crushed walnuts to the chocolate cake batter. Mix them well. Keep some crushed walnuts aside for adding them on the top of the batter in the mold.
- Add milk to the chocolate cake batter. Mix them well for another 3 to 5 minutes.
- The consistency of this walnut chocolate cake batter should be thick not watery.
- Pour this walnut chocolate cake batter in the silicon cake mold and spread it evenly. Garnish the walnut chocolate cake batter by sprinkling remaining crushed walnuts on the top of the batter.
- Carefully place this silicon cake mold having walnut chocolate cake batter in the hot Oven. Bake it for 55 minutes at 180 deg C. After 45 minutes, open the oven door and pierce a dry stick or small knife into the cake to check whether the cake is done or or. If the cake batter sticks to the stick or knife that means the cake is not done. Continue to bake and if required increase the baking time of the Oven.
- Once the Oven timer is over, don’t open the Oven door yet. Allow it to cool a bit.
- Wear a pair of gloves and carefully remove the silicon cake mold from the Oven.
- Walnut Chocolate Cake easily comes out of the silicon mold. Gently place it on the plate and cut it as required.
- Walnut Chocolate Cake is ready to be served with Hot Tea or Coffee.
