Pizza

Serve hot. Pizza is ready to eat.

 

Pizza was a challenging dish I cooked at home.  The right Owen temperature and timer was the key to perfection for this dish.  This Pizza was awesome and children loved it.  Try it at home. 

Ingredients For Pizza dough – (For Two Large size Pizza):

  • Flour (Maida) – Two Cups.
  • Yeast – 25 gms.
  • Salt – One tsp.
  • Extra Virgin Olive Oil – Three tbs.
  • Sugar – One tsp.

Pizza Dough Preparation :

  • Take a large bowl.
  • Add Flour (Maida), salt and sugar.  Mix it well.
  • Dissolve Yeast in 3/4th cup warm water.  Donot leave it for long in the water top avoid rising in the water itself.  
  • Add this dissolved Yeast mixture to the Flour mixture.  Mix it well.  Start Kneading and continue until it forms a soft dough.
  • Add Extra Virgin Olive Oil to the dough.  Continuing Kneading.
  • If the mixture is too hard, add a tbs of water and keep kneading.
  • The dough consistency should be like elastic.  If not add more Olive oil.
  • Line the Bowl with Olive oil to avoid dough sticking on the bowl surface.  Apply little Olive on the surface of the dough.
  • Keep this dough covered with moist muslin cloth, place it in a dark and warm place for minimum one hour.

Ingredients For Tomato Base : 

  • Tomatoes – 5 medium sized.  Boiled and Pureed.
  • Salt to taste.
  • Pepper powder – One tsp.
  • Red Chilli powder – Half tsp.
  • Dried Basil leaves – One tsp.
  • Dried Oregano leaves – One tsp.
  • Extra Virgin Olive Oil – Two tbs.
  • Bay leaves – Two.
  • Onion – One medium size – Finely chopped.
  • Garlic – 8 cloves – very finely chopped.
  • Sugar – One tsp.
  • Lime juice – One tbs.

Tomato Base Preparation :

  • Take a deep Pan and heat it up.
  • Add Extra Virgin Olive Oil and heat it up.
  • Add Onion, Garlic, Bay leaves and keep stirring.  Stir until the Onion is soft and translucent and Garlic is light brown.
  • Add Tomato Puree to the Pan.  Stir/Cook well.
  • Add half a cup of water.  Keep cooking the Puree on high heat until it becomes thick.
  • Add Pepper powder, Salt, Red Chilli powder, Dried Oregano leaves, Dried Basil leaves to the pan.  Keep stiring until the tomato is properly cooked until tomato changes colour and properly cooked.
  • Keep tasting to check for balance of flavours.
  • Lastly add sugar and lime juice.  Mix well until sugar is melted.
  • Turn off the heat.

Ingredients for Chicken Pizza Toppings (for Vegeterians Paneer can be used instead of Chicken) :

  • Chicken Breast Pieces – Two – Clean it and Chop it into small dice size pieces.
  • Ginger and Garlic paste -Half tsp.
  • Salt to taste.
  • Red Chilli powder – One tsp.
  • Lime juice – One tsp.
  • Pepper powder – One tsp.
  • Extra Virgin Olive Oil – One tbs.

Chicken (or Paneer for Vegeterians) Topping Preparation : 

  • Take a frying pan and heat it up.
  • Add Ginger and Garlic paste.
  • Add chopped Chicken to the pan and stir well continuously to avoid chicken sticking to the pan.  Keep stiring until chick is half cooked.
  • Add pepper powder, chilli powder, salt to taste to the pan.  Keep stiring continously until chicken is completely cooked.
  • Add Lime juice and mix well.  
  • Turn off the heat and remove the chicken from the pan and keep it aside.

Ingredients for Pizza Toppings : 

  • Red Capsicum (Bell Pepper) – One large – chopped into small square pieces.
  • Green Capsicum (Bell Pepper) – One large – chopped into small square pieces.
  • Yellow Capsicum (Bell Pepper) – One large – chopped into small square pieces.
  • Green Olives – Four tbs.
  • Jalepino – Two tbs.
  • Onion – Two medium sized – Chopped into small square pieces.
  • Shredded Mozrella Cheese – 250 gms.
  • Extra Virgin Olive Oil – Two tbs.
  • Salt to taste.
  • Red Chill flakes.

Pizza Preparation : 

  • Take the Kneaded dough and again gently knead it for a minute.
  • Make two large balls of the pizza dough.
  • Apply some flour on the cleaned cooking plat form.
  • Place the pizza dough on the flour.  Gently keep pressing from all sides and middle until round shape is achieved.  Use wooden pin if required.
  • Take a Microwave Owen Pan Plate base.  Apply Olive oil on its surface and dust it with little flour.
  • Gently lift the flat pizza dough and place it on the Microwave Owen Pan Plate.
  • Brush the flat pizza dough with extra virgin olive oil.  
  • Apply the Tomato base (prepared earlier) evenly on the surface of the flat pizza dough.
  • Add shredded mozrella cheese on the surface evenly.
  • Add pizza toppings and spread them all over the surface of flat pizza dough.  Add Red/Green/Yellow Bell peppers, Green Olives, Jalepino, Onion, sprinke salt to taste, drizzle Olive oil, add another layer of shredded mozrelle pizza on top.
  • Add Red Chilli flakes on top.
  • Heat up the Microwave Owen on Convection mode at 180 deg centigrade temperature. One heating is completed, gently place the Pizza Plate inside the Microwave owen. Bake it for 25 to 30 minutes at 180 deg centigrade.
  • After 30 minutes, removed the Pizza gently from the hot microwave and place the pizza on a cutting board.
  • Cut the pizza using sharp knife or pizza cutter into equal pieces.
  • Serve it with Tomato Sauce or sauce of your choice.
  • Serve hot.  Pizza is ready to eat.
