I saw this the other day on one of the Food Channels and got inspired to cook this dish at home. Initially I was not so convinced that this Mutton chops can be boiled in milk (as was in original recipe), but after doing it I was happy that it taste really good. Try it at your home, you will love it too.
Ingredients:
- Half a KG Fresh Mutton Chops.
- Fresh Milk – Half Liter.
- Hing (Asafoetida) powder – Half tsp.
- Kesar (Saffron) – Half tsp.
- Pepper – 4 corns.
- Cinnamon stick (Dalchini)- One inch.
- Clove (Lawang) – 4 seeds.
- Staranees – One.
- Salt to taste.
- Curd (Dahi) – One Cup – whisk it finely.
- Degi Mirch powder (Red chilli powder) – 2 tsp.
- Garam Masala powder – Half tsp.
- Sauf powder – One tsp.
- Ginger and Garlic paste – 2 tbs.
- Ghee – 2 tbs.
Method:
- Clean the Mutton Chops under water and dry it with cloth.
- Take a pan and add milk to it. Heat up the milk. Once boiled, lower down the heat to minimum.
- Add Hing powder, Kesar, Cinnamon stick, Clove, Staranees, Pepper corn and pinch of salt to the milk. Let it boil for two to three minutes.
- Add Mutton Chops into the milk and let it boil on medium heat until all the milk is dried up and coated nicely on Mutton chops. Turn off the heat.
- To prepare marinate for Mutton chops – take a bowl and add whisked Curd (Dahi), Degi Mirch powder, Sauf powder, Salt to taste, Garam Masala powder, Ginger and Garlic paste. Mix them all well.
- Add Mutton Chops (boiled in milk) to this marinate. Leave this marinate for atleast 30 minutes in Refrigerator.
- Remove the marinated Mutton chops from Refrigerator.
- Take a frying pan or grill pan and heat it up. Add Ghee to the pan and let the ghee melt and become medium hot.
- Add Mutton chops 2 to 4 pieces (depending on size of pan) at a time to the heated ghee and shallow fry them on medium heat from both sides until the Chops are cooked and turn light brown. Do this for all the remaining Mutton Chops.
- Kashmiri Kabargah (Mutton Chop Kebab) are ready to eat.
- Serve hot with slice of Lime.
- This Kebab will go well with Roti or Naan or Paratha or can be eaten just like that after a squeeze of lime on it.
