Crispy Chicken Salad

Enjoy the delicious Crispy chicken salad.

 

 

 

 

 

A great dish to have it as a starter or even as a meal.  Children would love it too.  Season this Salad with Fresh Mint Chutney just before serving.  Easy to make and highly nutritious, you should try this at home.

RECIPE:

Ingredients:

250 gms Chicken Breast.  Clean it with water and keep them as it is, don’t chop them.

1 tsp of red chilli flakes.

3/4 tsp of black pepper powder.

Salt to taste.

1 Lime juice.

Pinch of Chat masala.

2 tsp of ginger garlic paste.

250 gms of plain Corn Flakes.  I used Kelloggs. Crust the flakes with hand, consistency should be like bread crumps.

2 eggs, nicely beaten.

2 Onions, sliced into long pieces.

2 Carrots, sliced into long pieces.

4 – 5 Iceburg Lettuce leaves.

8 – 10 Green Olives chopped into circular pieces.

2 Cucumber, sliced into long pieces.

2-3 tbs of cooking oil to fry the chicken.

For Fresh Mint Chutney – 100 gms of fresh mint leaves, one inch of ginger, 2 tsp of extra virgin olive oil, pinch of salt, pinch of chat masala. Grind them into thick paste.  Take One cup of Curd and beat it well.  Add the mint paste into the Curd and mix well.  Keep it in the Refrigerator.

Method:

Take a marination bowl.

Add ginger garlic paste, salt to taste, chilli flakes, little lime juice, little black pepper and half tsp of oil.  Mix this well.

Apply the above marinate to chicken breast and keep it in the Refrigerator for at least 30 minutes.

Take crushed corn flakes in a small bowl.

Take beaten egg in another small bowl.

Heat up a pan with cooking oil in it.

Remove the chicken from refrigerator.  Take individual chicken pieces. First dip it in egg and then roll it on crushed corn flakes.  Place it on the hot oil pan and fry the chicken from both sides until golden brown.  Do this for rest of the chicken pieces.

Cool the chicken and cut them into long (about one inch) pieces.

Take a big mixing bowl.

Add Onions, Carrots, Green Olives, Cucumber, 1 tsp of lime juice, half tsp of black pepper powder, salt to taste.  Mix well.

Add chopped (cooked) chicken into this bowl.  Mix well.

Add 2 tbs of Mint chutney and mix the whole ingredients well.

Serve immediately.

Enjoy the delicious Crispy chicken salad.
