Pomfret Fry.

Spicy and Tangy Pomfret Fry served with sliced onion and lime.

The Pomfret Fish is one of the exotic dish cooked in different form across coastal region of our country.  I like Spicy Pomfret fish fried on a Tawa or a flat Pan. Always ensure that any fish you buy in the marked need to be fresh. How do you know the fish is fresh.  One way to identify whether the fish is fresh is by lifting the gill part, and look at the colour of the gills.  It should be dark pink.  If it is dark brown or blackish brown then you should give a second thought before buying this fish.  Another way to ensure the fish is fresh is to press the Fish’s belly by your middle finger, that part will depress, however it has to come back to normal position within minutes.  If so, yes the fish is fresh.  That’s my way to choose fresh fish.  You may have a better way, so I leave it to you to choose the fresh fish.

RECIPE:

Ingredients : For Two medium sized Pomfret Fish –

Fresh Fish.  Internals removed and nicely cleaned.  Give two incisions (cuts) with sharp knife on both sides of the fish.

One lime juice, 1 green chillies, 1 tsp of red chilli powder, half tsp of turmeric powder, salt to taste, 1 tsp of garam masala powder, half tsp of chat masala or dry mango powder, half tsp of coriander powder, 2 inch ginger, 8 garlic cloves, one Kokum, 2 tsp of extra virgin olive oil or any cooking oil.

Cooking Oil from shallow frying the fish.

One Onion sliced long.

Method :

Grind all the above mentioned ingredients in a grinder and make a thick paste of the mixture.

Apply this paste equally of both sides of the fish, inside the fish and also inside the incisions (cuts).  Ensure the whole fish (in and out) is coated well with the masala paste.

Allow the fish to marinate properly by covering it and placing it in the Fridge for at least One hour.  The more time you the fish in the Fridge, the better the marination.

Take a Pan and add oil to just the level where 1/4th of the fish will immerse in it.  Let the oil heat up.

Place the fish on the hot oil pan and cover it.  Allow it to fry/cook on one side for 5-7 minutes on medium heat. Turn the fish to another side and again allow it to fry/cook on the other side for 5-7 minutes on medium heat.

Place the Fried Fish on a plate, squeeze some lime juice on it.  Serve with some sliced onion.  Fish taste delicious when eater warm.
